Inspiration for meals that are super quick to assemble :)

Salad inspo masterlist

  • My favorite summer salad:rocket salad + cherry tomatoes + roasted almonds + sliced yellow peaches (roasted if u have time) + black olives. Add a tsp of jam in your vinaigrette (i like fig jam). Serve with bread and hummus!!
  • Rice noodle salad:add cucumber, carrot, bell pepper and tofu to thin rice noodles rinsed under cold water after cooking. I usually slice the veggies with a mandolin so it's faster. Peanut sauce: 1 big tbsp peanut butter, 3ish tbsp soy sauce, sriracha.

Sandwiches inspo masterlist

  • Bahn mi:sliced smoked tofu, carrots, cucumber + fresh coriander in bread spread with vegan mayo and sauce of your choice (i like peanut sauce: 1 big tbsp peanut butter, 3ish tbsp soy sauce, sriracha)
  • Tapenade: vegan tapenade (i love black olives so i always have a jar of homemade tapenade in the fridge lol) + roasted bell peppers from a jar (also a pantry staple in my appartment)+rocket salad

Pasta sauce inspo masterlist

  • Garlic and lemon: literally just fried garlic and a ton of lemon juice. Add butter beans and serve with some salad to balance it a bit

Bowls inspo masterlist

  • Taco bowl:black beans, avocado, chopped tomato over quinoa. Top with lime juice, vegan sour cream and taco spice mix
  • Teriyaki tofu:fried tofu + fried bell pepper and onion on top of rice with teriyaki sauce

Random dumb easy meals idea

  • Roast:any veggie you have around with a bit of oil and seasoning into the oven for 15 to 20min. Add a can of beans 5min before removing from the oven and serve with rice/bread/couscous (my fav option when i'm short on time)
  • Creamy butter beans: fry some shrooms and brocoli then add a can of buttern beans and soy cream. Season with nutritional yeast and black pepper and serve with bread or pasta.
  • Temaki:sushi rice with a bit of rice vinegar and sugar layered with tofu + veggies (raw: carrot/cucumber/bell pepper)(cooked: sweet potato) over a sheet of nori, then fold.
