Lentil dahl

My very unauthentic (but delicious) version!!

Wash some red lentils in a sieve (you can also use another kind of lentils or yellow peas instead, just adjust cooking time).

Dice an onion and sauté it in some oil. Add some chopped garlic and ginger to taste. Then add a tsp of tomato paste, a tsp of tumeric and a tsp of cumin. Sauté the spices for like a minute before adding your lentils. Top with boiling water, enough to cover the lentils with a few milimeters extra basically. Then put a lid on it and cook for 15min, or more depending on your lentils of choice. do taste to make sure!

Once the lentils are cooked, add a can of crushed tomatoes (like 200ml) and a tbsp of garam masala. Turn off the heat and once it has stopped boiling add a can of coconut milk (like 200ml). voilàààà!!

Top with: crushed coriander seeds (trust me on this i beg you), or alternatively fresh coriander, squeezed lime, I like to add some spinach and give it a little stir

Serve with: naan bread, other kind of bread you have laying around, rice

Fried noodles

Chop basically every old decaying vegetable you have leftover in your fridge + a block of firm tofu into strips. My favorite picks are onion/carrot/mushroom/zucchini. Fry the veggies separately in a hot pan/wok for just a couple of minutes: you want them to remain a bit crunchy. Fry the tofu while you're at it.
Cook some wheat noodles according to the packaging instructions.
Mix the sauce! You can get a bit creative here. My fav are:

  • Peanut: huge spoon of PB, like 2 to three tbsp soy sauce, some sriracha and a bit of water if it's too thick
  • Classic: 1 tsp tomato paste, 2 tbsp soy sauce, 1 tsp honey, sriracha, 1 tbsp cornstarch and some water for consistency
Add all the veggies & tofu back to a pan, add the cooked noodles and the sauce and fry together for 2 to 3min. Then enjoy!!!
Toppings: sesame seeds, green onions, fresh coriander, soy sprouts, edamame, crushed peanuts...

shakshuka

Okonomiyaki

Finely slice a white cabbage into thin strips. Blend together

  • half a block of silken tofu (like 200g)
  • a grated potato
  • 80mL of water
  • two big tablespoons of flour
  • a big teaspoon of miso paste
  • a pinch of salt and a pinch of baking powder
Mix the cabbage into the batter. You can also add other thinly slice veggies to it, I like to add kimchi but other popular options include mushrooms, green onion and aubergine..
Pour a cup worth of batter into a hot pan with oil and cook for a few minutes with a lid. Then flip and fry the other side for around 2 minutes.
Serve with vegan mayo + sauce of your liking. For the sauce, I usually mix a tea spoon of tomato paste + a table spoon of soy sauce + a tea spoon of honey + some sriracha.

Serve with:
  • Crushed cucumber with soy sauce & hot sauce
  • Kimchi
