Hello friends :D
This past week has been pretty chill, with most of my days spent working / knitting... Also attended my graduation ceremony as a FRAUD because I'm not defending my thesis until the end of the month (oops). I love the beginning of summer and living by the beach and taking walks late at night as the sun has been setting super late these days!
What I've been into this week:
Thai green curry paste
My main fascination with green curry paste is the fact that this shit tastes good with literally every single vegetable on earth. If you're vegan and/or care about your fiber intake, maybe like me you often end up with 3 to 5 bits of random unassorted vegetables that you're not sure how to combine in a dish. My recommandation is chopping it all roughly, slapping it in a skillet, cook it then add a jar of thai green curry paste, a bunch of water and some coconut milk. I swear this is delicious and works with !!everything!!. Here's a non exhaustive list of veggies I've put in green curry: aubergine, bean sprouts, bell pepper, broccoli, cabbage, carrot, cauliflower, celery, corn, edamame, kale, leek, lentils, mushroom, onion, pak choi, peas, potato, pumpkin, spinach, squash, sweet potato, tomato, turnip, zucchini... Serve with tofu/rice/rice noodles and enjoy!!

Wonderful indie album that has been on repeat in my apartment. If you're into beautiful clear voices, strong guitars and lovely violin arrangements, you will love this record.
Your favorite news outlet's podcast
Never felt more adult than listening to news podcast in the morning while making breakfast. Mostly, I enjoy the variety offered by this specific news podcast, L'heure du Monde (in french sorry guys), because everyday it deals with a new topic, sometimes politics, sometimes cinema, sports, history etc... I feel like it has been a fun way for me to discover subjects I knew nothing about and broaden my interests. So I recommend checking out if your favorite news channel has a podcast or radio show or anything similar! Specifically, I recommend 'forcing' yourself to listen to it even on days where the topic isn't something you'd normally go for. I guess for some people this feels obvious, but as someone with a baked attention span, I think we musn't underestimate how much of a conscious effort it takes to nurture your own curiosity.
Knitting update
So as I was maybe 2/3 done with my red sailor sweater, I realized I didn't like the fit: I initially thought baggy sleeves would be a good idea but turns out it's not what I pictured at all. Plus I was running out of yarn because I was knitting with super thin needles even though the yarn didn't call for such a small gauge. So I ended up frogging the whole thing (for non knitters: to frog a project means to unravel it, usually to re-use the yarn). But don't cry just yet: I did start again with a bigger gauge and was so annoyed at the whole thing I stayed up until 4am to knit it again, so I'm pretty much back where I started now, except with a better fitting sweater!! If my boss is reading this, sorry for barely doing any work this week, the knitting demons got me...
